Deep-Fried Cow Brain Sandwich


Fear of mad cow disease hasn’t kept customers from eating the deep-fried
cow brain sandwiches served Tuesday, Jan. 13, 2004, at the Hilltop
Inn in Evansville, Ind. The delicacy is traced back to a time when
southern Indiana newcomers from Germany and Holland wasted little.
Some families have their own recipes passed down over the generations.

    I can trace it back to the mid-’60’s when my grandma used to make them for my uncle.

    I never ate brains, but did eat beef liver and tongue, chicken livers and sweetbreads (thymus glands). It sort of nauseates me now.

    I have never seen or heard of a cow brain sandwich before. I do not think I could bring myself to eat one. I used to eat tongue though which I remember enjoying. Do not know if I could stomach it now though.
