Recipe: Quinoa with Broccoli
Serves 2
Ingredients:
- 1 cup white quinoa
- 1 cup broccoli, chopped into very small pieces (use florets and center of stalk)
- 3 Tbs tamari soy sauce
- 1-2 tsp olive oil
- 2 tsp parsley
- 1/8 tsp crushed basil
- 1/8 tsp dill weed
- 1/8 tsp paprika or cumin
- Salt and cayenne to taste
Preparation:
- Rinse quinoa in cool water.
- Put quinoa in 2.5 – 3 cups water and bring to boil
- Skim off foam
- Turn heat to low, add broccoli, and simmer till cooked
- While quinoa is cooking, add remaining ingredients to saucepan. Bring to boil, and then simmer for 5 minutes.
- After quinoa is cooked, mix together.
