Recipe: Mattar Paneer

Serves 2


Ingredients:

  • 1 large (or 2 medium) tomatoes, chopped well
  • 1 large (or 2 medium) onions, diced finely
  • 2 Tbsp oil
  • 1 cup peas
  • Dozen cashews
  • 1/4 tsp allspice
  • 1/4 tsp turmeric
  • 1/2 tsp cayenne
  • 1 heaping tsp coriander
  • 1 heaping tsp cumin
  • 2 heaping tsp ginger
  • 2 heaping tsp garlic
  • 1-2 heaping tsp salt
  • Few sprigs cilantro
  • 1/2 brick paneer

Preparation:

  1. Slice paneer and fry in a little oil until firm
  2. Add oil to hot wok
  3. Transluce onions
  4. Add spices, mix, and cook
  5. Add ginger & garlic, mix, and cook
  6. Add tomatoies, mix, and cook
  7. Put in blender
  8. Add cashew & cilantro
  9. Blend
  10. Back in wok on high heat.
  11. Add salt. [Add peas if fresh]
  12. Cover and cook. Reduce heat when boils
  13. Simmer 5-10 minutes, mixing occasionally
  14. Add paneer [Add peas if frozen]
  15. Cook 1 minute
  16. Serve with rice
