Recipe: Quinoa with Broccoli

Serves 2


Ingredients:

  • 1 cup white quinoa
  • 1 cup broccoli, chopped into very small pieces (use florets and center of stalk)
  • 3 Tbs tamari soy sauce
  • 1-2 tsp olive oil
  • 2 tsp parsley
  • 1/8 tsp crushed basil
  • 1/8 tsp dill weed
  • 1/8 tsp paprika or cumin
  • Salt and cayenne to taste

Preparation:

  1. Rinse quinoa in cool water.
  2. Put quinoa in 2.5 – 3 cups water and bring to boil
  3. Skim off foam
  4. Turn heat to low, add broccoli, and simmer till cooked
  5. While quinoa is cooking, add remaining ingredients to saucepan. Bring to boil, and then simmer for 5 minutes.
  6. After quinoa is cooked, mix together.
